    yes been a line cook for 12 years, freezing meat is a no no

    looks good but i’m not sure if the meat will be tender.. never seen beef strew made that quickly

    I have eaten at Brandy’s restaurant, and honestly, I have received something THAT good looking, ONCE. I ordered the chorizo and eggs and it looked like a circle of vomit, and it had that nice dark “I’ve been sitting on the ledge” hue eggs get when they sit for a while.

    Then again, I tend to eat there when the restaurant is dead (early afternoon), so why should they make an effort during the “stocking and smoking” hours of the day?

    Its just wrong to freeze meat in general.

    Less tender and more spices. Or, more tender and less spices. It looks like you got a catch-22.

    Freezing pushes marinades deeper into the meat and tenderizes it? Not sure about that but Hah about tenderizing it. If anything you lose moisture and it makes the meat tougher if anything.
